OTTAWA - (Health Canada) - Cooked turkey is a central part of many holiday celebrations in Canada - especially Thanksgiving. Health Canada would like to remind all Canadians that there are simple steps they can take to help ensure their turkey feast is a safe one.
Adopting standard safe cooking and safe handling practices (clean, separate, cook and chill) reduces the risk to yourself and your family from undercooked turkey and stuffing and from cross contamination during preparation.
Health Canada reminds you:
- Store your turkey in the refrigerator or freezer immediately after it is purchased.
- Do not thaw your turkey at room temperature. Thaw turkey in the refrigerator or in cold water.
- If you thaw your turkey in cold water, keep the turkey in its original wrapping and change the cold water regularly to ensure that the water remains cold.
- Do not rinse raw turkey. This can spread bacteria everywhere the water splashes, creating a safety hazard.
- Clean and disinfect surfaces and kitchen utensils touched by raw turkey or drippings from thawing turkey.
- Use a food thermometer, and cook turkey until the temperature of the thickest part of the breast or thigh is at least 85ºC (185ºF).
- Cook stuffing separately in its own oven dish or on the stove top. If you do stuff your turkey, stuff loosely just prior to roasting, and remove all stuffing immediately after cooking. Cook stuffing to a minimum internal temperature of 74ºC (165ºF).
- Refrigerate all leftovers within two hours of cooking.
Turkey poses particular food safety challenges because it can be contaminated with bacteria such as Salmonella, which can cause diarrhea, vomiting and stomach cramps.
It is estimated that there are between 11 million and 13 million cases of food-related illnesses in Canada every year. Many of these illnesses could be prevented by following proper food handling and preparation techniques.

VICTORIA - Seniors and people with disabilities will now have easier access to programs that offer equipment and assistive devices thanks to $858,000 of funding and donations for the first Personal Supports Centre that officially opened today, announced Rich Coleman, Minister of Housing and Social Development. A disabled person who is unable to work will be living at 60% of the poverty line on PEI.
The Green Party and NDP would increase incomes for the disabled to at least the poverty line for those unable to work due to disability. The Liberal Party would partially move the disabled closer to the poverty line. The Conservatives have no announced plan. The Green and NDP have promises to beef up Canada’s legal protection of the disabled. The Liberals and Conservatives did not respond on that question.
The Autism Spectrum Disorder (ASD), a developmental disability beginning in early childhood, now affects one in 150 eight year olds, according to the latest data from the Centres of Disease Control and Prevention. Delegates attending a Canadian Council on Rehabilitation and Work (CCRW) conference this week are being encouraged to think about how they can improve access to employment for persons with disabilities. The CCRW national conference "Employment Now! Diversity Planning for Inclusive Employment" began Sunday and continues today in St. John's. "It is about employment now, it's not about employment in a decade, so the conference value will be what each of us makes of it," said CCRW board chairwoman Jackie Challenger.
Surgical wait times in Alberta and across the country decreased by about one week from 2007 levels, the first notable decline during the past 15 years, according to a new Fraser Institute study. The report, released Tuesday, found the median wait times for treatment dropped in Alberta from 19.5 weeks last year to 18.5 weeks this year. Nationally, the think-tank found the wait time for Canadian patients seeking surgery dipped from 18.3 weeks in 2007 to 17.3 weeks this year.
It is a medical fact still not well known to much of the public that strokes are the main cause of disability among adults and one of the top causes of death in Québec. Having made stroke a priority for a number of years, the Heart and Stroke Foundation of Québec is today launching the first Québec Summit to Conquer Stroke, which will bring together more than 100 health professionals. Since 2005, the Heart and Stroke Foundation of Québec has been working with health organizations and stakeholders to develop a Québec-wide series of rapid, high-quality services for people who suffer a stroke and those at risk. If it was adopted by the Ministère de la Santé et des Services sociaux, this strategy would consolidate all steps of intervention: prevention, prehospitalization, treatment, rehabilitation, and reintegration into the community.
